As the anticipation for this summer builds, we're brimming with excitement. With hopes high for fabulous weather (fingers and toes crossed!), we're also looking forward to indulging in delightful apres-sea moments on Salt's terrace. While we can't predict the weather, one thing we're certain about is the culinary delights awaiting you, thanks to the arrival of our new Chef Patron, Paul Clarke, to the Portland hospitality team. Paul is raring to infuse his expertise and innovation into our on-site venues, promising an unforgettable dining experience whether you're popping in for pit stop or looking for a lazy lunch.
After last summer's damp squib, both literally and figuratively, we're certain this season will shine brighter than ever before. So, leave your brolly at home because we're confident you're going to fall in love with what Paul brings to the table. We sat down with him to find out a bit more about him and his plans for Portland.
"Following in the footsteps of my grandfather, a distinguished chef in the Royal Navy, I've dedicated myself to the culinary arts for over 15 years, delivering exceptional cuisine with a touch of creativity. Collaborating with local and ethical suppliers, such as Bagnell Farm and Portland Shellfish, I've developed a passion for showcasing the finest Dorset produce.
My close friend, Emma Dedman, is joining me as Head Chef. Renowned for her tenure at The Langham Hotel in London and various international culinary ventures, we share a unified vision of creating a dining destination that celebrates exceptional produce and culinary innovation. Our recent achievements, including 2 AA Rosettes and recognition in esteemed culinary awards, underscore our dedication to delivering outstanding dining experiences."
While we're unable to divulge specific details about Paul and Emma's dishes at this time, rest assured that their menu will feature a diverse array of options, including a variety of vegan and vegetarian dishes and more information will be coming your way very soon.
